Delicious Badischer Sauerbraten – A Traditional German Dish

In the town of Achern, Baden-Württemberg, Rosa Karcher, a local councilwoman, shares her love for the authentic Badischer Sauerbraten. This hearty and flavorful dish is typically enjoyed with wide noodles and pears filled with cranberry compote. As the seasons change, it pairs perfectly with a crisp field salad, crunchy croutons, and a fine Baden red wine.

Ingredients

  • 1 kg beef roast
  • 1 liter good-quality dry Baden red wine
  • 2 onions
  • 3 garlic cloves
  • 1 large carrot
  • 1 small piece of celery
  • ½ leek
  • ½ bunch of parsley
  • 2 bay leaves
  • 5 allspice berries
  • 4 juniper berries
  • 3 cloves
  • 1 teaspoon salt
  • Ground pepper
  • 3 tablespoons cranberry compote
  • Some cornstarch or dark gravy thickener
  • 200 g sour cream or crème fraîche

Preparation

  1. Wash the beef roast and place it in a large bowl. Pour the red wine over it, ensuring the meat is completely covered.
  2. Peel and finely dice the onions and garlic, adding them to the bowl. Cut the vegetables into small pieces and add them to the marinade along with the spices.
  3. Stir the red wine marinade and refrigerate it covered for three to five days, turning the roast occasionally.
  4. Remove the meat from the marinade and pat it dry. Heat oil in a Dutch oven and sear the roast on all sides.
  5. Add the cranberry compote and the marinade with the spices and vegetables to the pot. Allow it to simmer lightly for approximately one and a half to two hours.
  6. Remove the meat from the pot, slice it, and keep it warm. Strain the sauce through a sieve. Thicken it with a mixture of red wine and cornstarch or a dark gravy thickener, bringing it to a brief boil.
  7. Stir in the sour cream or crème fraîche and season to taste. Serve the sauerbraten with wide noodles or traditional Baden spaetzle, potato dumplings, or bread dumplings.
